Pizza Crust Recipe; Fresh Made Pizza; Texas Bed & Breakfast Dinner

We serve several dinners here at Star of Texas Bed & Breakfast, and one of my favorites is the hand made pizza. I have a simple recipe (sorry have no idea where it came from, so if this is yours, add your name on it!) It is easy to mix and you let it rise to use that day or can even put it in the refrigerator for several days. So here goes...

PIZZA DOUGH RECIPE

1/2 teaspoon active dry yeast
3/4 cup very warm water
2 cups all purpose flour
3/4 teaspoon kosher salt
3 tablespoons olive oil
(wow, that's all?, yep that simple)

So sprinkle the yeast over the top of the very warm water and set aside for a few minutes while you mix the other stuff in a bowl.
Mix the flour and salt together, if you are using a mixer, slowly drizzle the olive oil into the flour mix, if you do it by hand like me, I add the olive oil to the water, then slowly pour into the flour as I mix together. Now put olive oil in another bowl, just enough to coat, and turn the dough into this and flip over to cover in the oil, now cover tightly and set aside to rise for 1 to 2 hours, or put in the fridge and use in a few days. If you put it in the fridge, set it out to warm up and rise a little before you use it.

Now on a floured surface roll out your dough to the thickness you like, I love thin crust pizza so I roll it thin, you can make one big one or several personal pizzas as I do for my guest.
Place it on a baking sheet or pizza stone if you are lucky to have one, in an over at 350 degrees bake till just getting light brown, remove and top with all your favorite stuff and lots of cheese, then place back in the oven to brown the crust edges and melt all that wonderful gooeyness on top.
Serve it with salad, vino, dessert and friends.....enjoy!

If you love to get outdoors and enjoy the sights by hiking, then you would enjoy several Texas Hiking trails in and around Brownwood, TX. I will start off with our 1 mile trail, here at Star of Texas Bed & Breakfast. We have a 1 mile loop over our 22 acres and it is more of an adventure to see what art items you will find around the next corner. We have done many projects on the trail, and now our guest are adding to the fun things to discover on our trail. We are part of the Texas Wildlife Trail and there are several locations in the area to enjoy looking for wildlife. Next you can head out the Lake Brownwood State Park and enjoy the Texas Oak Trail inside the park. We have city trails at some of the city parks in Brownwood also that you can enjoy a pleasant stroll or kick down the miles for a power walk on. So when ever you are in the area, come hike our Texas Hiking trails in Brown County and enjoy what nature has to offer.

So I made these awesome Cinnamon rolls from The Pioneer Woman's Cookbook, and they are great, it makes a huge amount, so decided to do some of them as Tarragon and butter rolls too. This is a great recipe, so make them till your hearts and tummies are full. Make great gifts for people. I served them at Star of Texas this week and all loved them. So tonight I am having the Tarragon ones with homemade Veggie Cheese soup.

Texas Weddings

There are many traditions for weddings in Texas. I think we have some pretty good ones. Here is just one example, my son was married out on a big rock in the Llano River, it was a beautiful wedding, water flowing around them, bagpiper playing, beautiful fall colors. After the vows were spoken and the rings and kiss exchanged, they had built two small seperate fires, then each lit theirs, when they were in full flame, they pushed the two together to make one flame, it was spectacular. Quiche recipe for Savory Pumpkin Quiche

Savory Pumpkin Quiche, this turned out yummy if you love pumpkin. Who says pumpkin has to be served sweet. This one I think is best served at lunch or for dinner with a fresh side salad and garlic toast. I tried this one out on my husband and a repeat guest and they liked it.

SAVORY PUMPKIN QUICHE

1/2 cup low-fat Gruyere cheese
1 frozen pie crust
1 cup milk
2 large eggs
1 tsp fresh chopped thyme
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1 cup fresh or canned pumpkin puree

Preheat oven to 400*. Sprinkle cheese over the bottom of piecrust.
Whisk together milk, eggs, thyme, salt, pepper and nutmeg. Blend in the pumpkin. Pour over the cheese in the crust.
Bake 10 min. then reduce the heat to 350* and bake 45 to 50 min more, or until pie filling has set up and cool for 10 min before slicing.

Lemon Ricotta Pancakes, Recipe for Pancakes

Fresh Lemon Ricotta pancakes, make my mouth water just thinking about them. These wonderful light pancakes are infused with fresh lemon zest and juice and are super light and tasty. I can't remember where I found this recipe, but here's credit to whom ever it belongs!! I serve these up with whipped cream, lemon curd topping and fresh plump raspberries and bacon or sausage. Do try these out and let me know how you like them, are better yet, come spend then night with us at Star of Texas Bed & Breakfast in Brownwood and I'll cook them for you, "do I hear a yes for breakfast in bed"!!

LEMON RICOTTA PANCAKE RECIPE

3/4 cup all-purpose flour
1 T. baking powder
1/2 tsp. ground nutmeg
1/4 tsp. salt

1 cup ricotta cheese
2 eggs ( mine are fresh from the girls)
2/3 cup milk
1 lemon, zested and juiced
1 (11oz.) jar lemon curd ( I get mine from a friend at Farmers Market)
Fresh raspberries, for garnish
Confectioner's sugar for dusting
And fresh whipped cream for the topping

Combine flour, baking powder, nutmeg, salt in a small bowl. Whisk together the cheese, eggs, milk, lemon juice and zest in a large bowl. Brush the hot griddle with butter. Pour about 1/4 c batter for each pancake cook till light golden on both sides. Top it with warmed lemon curd, a dust of powder sugar, a big dollop of whipped cream and fresh raspberries. enjoy!

There seem to be more people who are interested in getting away from the large weddings and going to the intimate elopement or the newest term "weddingmoon". We have been asked what all is involved in this process and what do they need to do.
Eloping in Texas is very easy, the couple simply need to get a Texas marriage license 72 hours before the ceremony will be held, the only exception is if you are active military you can get a license and marry immediately. If you are wanting to not hassle with all the planning, cost and extensive guest list, but just a lovely simple ceremony to say "I do", then be on your honeymoon, then the wedding moon is just right for you. Sweet Corn Pancakes with Cilantro butter; Texas Hill Country bed and breakfast

Tried out this wonderful recipe at Star of Texas Bed and Breakfast, and guest loved it. It was submitted to a PAII publication by the William Henry Miller Inn. Try this one and serve it with pure maple syrup and crisp thick cooked bacon.

Sweet Corn Pancakes with Cilantro Butter

1 egg
1 1/4 c buttermilk
1/2 tsp. baking soda
1 1/4 c flour
1 tsp sugar
2 Tbsp oil
1 tsp baking powder
1/2 tsp salt
1 or 2 small ears of corn
In a large bowl, beat the egg thoroughly, add the buttermilk and baking soda. Add flour, sugar, oil, baking powder and salt. Take kernels off the cob with a sharp knife add to the batter. Bake on a grill and flip to be golden on each side. (Note: can use can corn if needed).

Dutch Baby Pancakes; Texas Hill Country Bed and Breakfast

I love making Dutch baby pancakes here at Star of Texas Bed and Breakfast. Right now I am serving them up with fresh sausage and Agave glazed nectarines and peaches. You can top them with any of your favorite fruits, syrups, creams or what ever stirs your taste buds. I have found that making them with a 2% milk makes them even lighter and they rise way over the pans. So find below my recipe and enjoy them at home, or come visit our Texas Hill country bed and breakfast and we'll serve em up to you.

DUTCH BABY PANCAKES

mix this up for each pancake you bake.
1/3 cup flour
1 egg
1/3 cup milk (2% is good)
1 teaspoon vanilla
melt a tablespoon of butter in a ramekin dish that is about 4" across, mix together the ingredients and then poor over the melted butter, return to the oven that is set at 350 degrees, and bake about 30 minutes, they will start to rise and puff up really tall, once you take them out of the oven and place them on a plate they will fall and leave a nice hole to fill with your favorite toppings. enjoy!

Summer Wine Sipping; Texas Wine Country Lodging Brownwood

Wow we have so many great wineries in Texas, and summer is a great time to sample and experiment with some great taste and refreshing drinks. At Star of Texas Bed and Breakfast we do our First Sunday Yoga practice and everyone brings a covered dish to share a meal and great fellowship. This Sunday, Sara brought a pitcher of home made Sangria that was so wonderful. You can add any wine you like with lots of fresh fruits. She also add some Basil and Rosemary and to make it especially fruity, she steamed the fruits for a bit to open up the sweet flavors to infuse to the wine. You can add a blush or rose or white or red, it's just what you like in wine and then any fruit you like. Peaches, oranges, berries all make a great Sangria. So for the summer visit a favorite Texas winery and make up a wonderful Sangria to share with friends on a summer evening. Oh and don't forget those beautiful flowers from your garden to brighten the table.enjoy!

The Way Out Wineries are having their annual Picnic Road Trip this weekend. It is such a great trip to take in all the sites and taste of great Texas wines. Star of Texas Bed and Breakfast is the perfect half way stay over on this trail. Whether you start in Austin and come West or start in Ft. Worth and head south we'd love to have you stay with us. Texas Wine Country; Tub Party; Star of Texas Bed and Breakfast

We had another Texas Tub Party here at Star of Texas Bed and Breakfast and had a great time. With over 40 people attending, there was lots of laughter and good times. Music was by Brian Potter and friend, an eclectic musician that can pick up any instrument and start playing it. We had lots of finger foods and everyone brought their favorite Texas wine or beer to put in the ice tub and for everyone to share and have a tasting of our great flavors of Texas. Even though the weather was up the 100's all seemed to relax and enjoy the garden and great music. We like to host several of these events a year and hope that you will be able to come enjoy one with us sometime.

It's time for our Summer Texas Tub Party. Now that might throw a few folks off, having a tub party at Star of Texas Bed and Breakfast, but it's not what you think. We set up the garden, make lots of great finger foods, have live music from 7 to 10 and you bring your favorite Texas beer or wine to put in the iced tub for everyone to share. It's a fun evening for only $15 per person, so put on your Texas duds and come on out to join us, you don't have to be a guest to attend, just need to know you're comin.

Texas Elopement Outdoors, Star of Texas Bed and Breakfast

We have been working on our outdoor garden where we do most of our Texas Elopement ceremonies here at Star of Texas Bed and Breakfast. The native rocks that where here are beautiful and some a little unlevel, so with brides and their heels it was always a challenge to stand in this favorite spot. So yesterday we loaded the digging bar onto the trail hog got our gloves and drove to the back of our land to find the perfect rocks to make a level area for the ceremonies by our beautiful pond and waterfall. We love to do the ceremonies here so we are excited to have this new addition to the garden.

Wedding rings; Elopements at Star of Texas Bed and Breakfast

We do lots of elopements here at Star of Texas Bed and Breakfast, and I think one of the most beautiful parts of the ceremony is when the couple exchange rings and speak the vows over them to each other. Sometimes it's a long slow process to place the ring on the finger, other times it's a struggle as it doesn't fit just perfect, but always when complete and they contiune to hold hands, it has a sacred message that only the couple can truly understand and feel. This is usually the place in the ceremony if someone is going to cry it happens here, usually very touching.
So the next time you attend a wedding, pay special attention to the ring ceremony, and smile.

Becca's Sugar Cookies are the best and our guest just love them so we will share the recipe with you. At Star of Texas Bed and Breakfast, we like to serve little special treats to our guest when they arrive or on the second day of the visit. Becca loves to bake, so they get treated with lots of homemade goodies.

Becca's Sugar Cookies
1/2 cup unsalted butter at room temperature
1/2 cup vegetable oil
1/2 cup granulated sugar, plus some for dusting
1/2 cup powdered sugar
1 large egg
2 tsp. vanilla extract
2 cups all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt

In a mixer with a paddle, beat the butter about 1 minute, add one ingredient at a time by the list up to flour, mixing on medium until each one is blended in. Stir in the flour, baking soda and salt all at one time with mixer on low. Refrigerate for 1 hour or freeze 15 minutes. Use an ice cream scoop or what ever size cookie scoop to drop the dough on the parchment lined cookie sheet about 2 " apart. Use the bottom of a sugar dipped glass to press flat to 1/4" thick. Bake 8 to 10 minutes till light golden. enjoy!

Filled Biscuits; Star of Texas Bed and Breakfast

Wow, I love semi-homemade, and sometimes here at Star of Texas Bed and Breakfast I have come up with some great ideas to make mornings a little easier, so here is a quick way to make some wonderful morning biscuits and doesn't take alot of time. I start with a can of the fluffy buttermilk biscuits, pull them into 2 parts. Spray a muffin tin, place 1/2 the biscuit in the muffin tin up the sides, now fill it with whatever you like, jelly and butter, fruit, even cheese and cooked crumbled sausage is great. Now take the other 1/2 and place it on top of the bottom and seal the edges with your fingers. I like to kinda scrunch up the top as it cooks really neat looking too. Bake them according to the can directions and serve hot, guest love them and they are so tasty. I usually coordinate the filling with what ever other dish I am serving that morning like a Spanish quiche. enjoy!

Bird Watching at Star of Texas Bed and Breakfast; Texas Hill Country Birding

We have lots of great birds in the top of the Texas Hill Country, and at Star of Texas Bed and Breakfast, we have birdwatchers stay with us often. Right beside the Oak Cottage is a screech owl nesting box, they have been coming to it every year for 14 years now. It is so fun to watch them come and go. We and our family with adjoining property, have put up Blue Bird houses, and they are nesting in them also. We did have a small Green heron on the goldfish pond the other morning, snacking on some of the minnows. If you love to bird, you would enjoy the Canoe package we offer that takes you on the Pecan Bayou where you will see lots of birds and other wildlife. I think most watchers just enjoy sitting on their porches and watching what all comes in to feed or in the nearby trees. A Taste for Wine and Murder Mystery Dinner, Star of Texas Bed and Breakfast

We held our first murder mystery dinner Saturday at Star of Texas Bed and Breakfast, and it was a blast. We had 36 people attend and 8 of them were characters in the mystery. We seated everyone around round tables so you didn't know if the character sitting next to you might be the murderer. A wonderful meal was catered by CR Catering from Brownwood and folks brought their own wine to enjoy with the meal.

Jae Nelson, one of my assistants helped in keeping the evening moving along and fun for everyone, she really was "the hostess with the mostess", check out this hat!!!

Thank you to everyone who came, our next event is June 18th, another Texas Tub Party, bring your favorite Texas beer or wine to put in the iced tub to share with everyone. We provide the snacks and some great music out in the garden.

Steve's Market and Deli is a fun place to eat when you are staying with us at Star of Texas Bed and Breakfast. They serve a great menu of things like, Black Bean Bisque Soup or Katies Chipotle Corn Bisque Soup. A favorite sandwich is the Ray Bourbon with a great bourbon sauce or the Shrimp Nachos. You will also find desserts like Dublin Dr. Pepper cake and great teas of coffee. They serve Fair Trade Peace Coffee.
They are only open during the week from Monday to Friday from 11 to 3. So if you are here during the week try them out for lunch.

Eloping in Texas, Star of Texas Bed and Breakfast

I am often asked, "Do people really elope, and what does that mean?". An elopement is simply a couple going away to have a private marriage ceremony. In Texas you must obtain a marriage license from your county courthouse 72 hours before the marriage, unless you are active Military. The officiant that marries you will be responsible to mail that back in for you.
We offer 2 different Elopement packages at Star of Texas Bed and Breakfast. The Basic Elopement is paid for seperate from your room and includes the ceremony where Don, that is a Chaplain, marries you. We provide a small cake, punch, a bride's bouquet and take pictures that we put on a photo cd for you to have. We will do this small ceremony even if you are not a guest but it must be scheduled in.

Our most popular package is the Ultimate Texas Elopement Honeymoon Getaway... You get everything that is mentioned above in the basic plus your choice of cottage for 2 nights, a massage for 2 in the Garden room and a romantic evening meal served to your room.
How simple and hassle free is this. But what I love most, is it is very intimate. We allow you to select the location on our property for the ceremony that best fits you, like on the trail, at the pond on the wedding deck, we have done them all over our property.

Elsie's Biscuits, Star of Texas Bed and Breakfast

Elsie's Biscuits are a recipe that came from the Blueberry Hill Inn, and we now serve at Star of Texas Bed and Breakfast. They are a great biscuit and can be frozen and reheated, but right out of the oven with butter and jam just can't be beat. enjoy!

Elsie's Biscuits

3 cups flour

2 TBS baking powder

1 tsp. salt
1/4 pound butter
1/2 cup milk
1/2 cup buttermilk
1/3 cup sour cream
1/8 tsp. vanilla
1/8 tsp. sugar

Sift the flour with the baking powder and salt. Cut in the butter, then add the other ingredients. Stir only until combined. Toss the dough in a little flour and pat it down with hands, do not roll it. When it's 1/2" thick cut into biscuits and place on lightly greased pan. Bake for 12 minutes in a hot oven of 450*. When they are light and golden, they are perfect. Makes 8 large, 15 medium or 30 little biscuits.

Master Scone Recipe; Star of Texas Bed & Breakfast

Here is a great master scone recipe that I use at Star of Texas Bed and Breakfast, you can make into sweet or savory scones. It's easy to make ahead and keep in the refrigerator then roll out and cut.

Master Scone Recipe
4 c all purpose flour
2 tsp of salt

1 T.of baking powder
3/4 lbs of unsalted butter, diced and cold

4 large eggs
1 c of heavy cream

1 egg for washing over scones
Preheat oven to 400*

Kneed to blend

Place 4 c flour, salt and baking powder into the bowl of a mixer and process with a paddle attachment until mixed thoroughly. Add butter and mix until butter is pea sized. In another bowl mix eggs and cream thoroughly. Pour into running mixer until all ingredients are just combined. Stop mixer, dump onto a floured surface: knead until well combined. Shape dough into a round. Use a rolling pin to roll dough out 3/4" thick. Cut into whatever shape you like or use a cookie cutter. Place individual scones out on a parchment papered cookie tray. Mix egg and brush on top of scones. Sprinkle sugar on sweet scones. Place in oven and bake up to 25 minutes or until scones are a golden brown and crisp on the outside. Makes 8 to 12 large scones, or cut into smaller ones.

For Savory Scone (cheddar/dill)

1/2 lb sharp cheddar cheese, shredded or diced

1/2 c fresh dill rough chopped

Traditional cut wedges

For Sweet Scones ( fruit)

1/2 c of fruit, fresh or dried
2 T. sugar add to dry mix

You can add any flavors you want, vanilla bean or pumpkin and make an easy glaze from powder sugar, milk and spice if you like to drizzle over them. enjoy!

With fall in the air, nothing is more warming and soothing than the smell of pumpkin in the oven, so I wanted to share this easy and yummy scone recipe with you that we make at Star of Texas Bed & Breakfast.

Pumpkin Spice Scones
4 1/2 cups all-purpose flour
1/2 cup packed brown sugar
4 teaspoons baking powder

4 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cold butter
2 eggs
1 1/4 cups canned pumpkin
3/4 cups milk, divided

Served with Cabernet fruit and Canadian bacon Quiche

Glaze 2 cups confectioners' sugar, 3 tablespoons milk, 1/4 teaspoon pumpkin pie spice

In large bowl, combine the first seven ingredients, cut in the butter until it resembles coarse crumbs. In another bowl, whisk eggs, pumpkin, and 1/2 cup milk. Stir into dry ingredients just till moistened.

Turn out onto floured surface; knead 10 times. Divide dough in half. Pat each portion into an 8" circle, cut each into eight wedges. Separate and place 1" apart on ungreased baking sheet. Brush with remaining milk.
Bake at 400* for 12-15 min. or until golden brown. Remove to wire rack, cool 10 minutes. Combine the glaze and drizzle over scones. Serve warm. Makes 16 scones or more smaller ones.

Texas Wine Trail Month is the whole month of October, we at Star of Texas Bed and Breakfast got in on the adventure of harvesting grapes. Our outing took us to Brennan Vineyards in Comanche and we watched as the machines harvested the grapes, dumped them into the bins and then transported to the de-stemming machine, that roared like a dragon as the grapes went through and watched them pass before us headed to the stainless steel vats to do what Brennan does best, make great wine. We then ventured out to the fields again with clippers in hand and experienced the hand picking and what an awesome morning it was. I being raised on a cotton farm can truly appreciate the hand harvesting of any crop. Loaded down with our bags of fresh picked grapes we head home and started to press the juice for grape jelly and my friend ventured so far as to try his hand at, yep you guessed it, homemade wine. It was a great day, I leaned so much about the grapes being harvested and got to feel like a young farm girl again. Visit and support all our Texas Winery's this month and enjoy the harvest.

Merlot Wine Brownies, Star of Texas Bed and Breakfast

   I tried out this recipe for Merlot Wine brownies at Star of Texas Bed and Breakfast this past week and they were really good. A thick cake like brownie. Try it and see if you like them too.

    Merlot Wine Brownies

                                                               1 cup of Merlot wine
                                                                     3/4 cup butter

                                                           4 oz. unsweetened chocolate
                                                                     2 cups sugar
   3 eggs
                                                              1 tsp. pure vanilla extract
                                                               1 cup all-purpose flour
                                                  1 cup coarsely chopped pecans, toasted

Preheat oven to 350 *. Lightly butter a 13X9 baking pan. In small sausepan, simmer wine over medium heat until reduced to 1/4 cup. Pour into a large bowl and set aside. In top of double boiler, melt butter and chocolate over simmering water. Pour into wine and whisk until smooth.

In top of double boiler, whisk together sugar, eggs and vanilla over simmering water until light and thick. Pour into chocolate mixture and whisk until smooth. Stir in flour and 1/2 cup of pecans. Pour into prepared pan and sprinkle with remaining pecans. Bake for 40-45 min. or until a toothpick inserted in the center comes out clean. Cool and cut into squares. Yummy!

Peach Cobbler Recipe, Star of Texas Bed and Breakfast

I love fresh peaches this time of year, and some friends brought a bucket load of organic ones to Star of Texas Bed and Breakfast. So I made fresh cobbler and wanted to share this easy recipe with you.

Peach Cobbler

Melt 1 stick of butter in a 2qt baking dish in the oven set at 350*

In bowl mix together, 3/4 cup of flour, 1cup sugar, 1/2tsp salt,
2 tsp. baking powder, 3/4 cup milk. Once the butter has melted,
pour the mix over the butter and slowly mix together. Now pour
on top of this mix 2 cups of fresh cut peaches. Bake for 45min.
It is so easy and taste great, I've made this one for years, and you
can use any type of fruit.

Well this week I am working on a new package to offer my guest at Star of Texas Bed and Breakfast. It's the Texas Wine Trail Package. We are in the center of the Way Out Wineries Trail and located at the top of the Texas Hill Country. We will offer this fun package at our bed and breakfast here in Brownwood and know that guest will really enjoy it. Along with the full hot breakfast that we deliver to the room each morning, guest will enjoy a Picnic basket lunch , a dinner delivered to their room and top off the evening with chocolate covered strawberries and each will have a Way Out Winery wine complimentary to go with them. What would July 4th be without some fireworks, there will be several shows going off over the weekend, some also offering family fun things to do before and of course lots of food. Bed and Breakfast Recipe-Tarragon Quiche

This is a favorite of guest and so easy to make. Now I have to admit, I don't cook by recipes just go by smell and sight mostly, so this might not be exact for you, but it should do fine. I use 1 sheet puff pastry for my shell and place in a sprayed pie pan. In a bowl, I mix 4 fresh farm eggs, probably would be large if I bought them, wisk together then add about 1/2 cup half and half, wisk again and pour into pie pan. Salt and then add dried tarragon till the smell is strong. Bake in a 350* oven for about 30 minutes till it puffs up pretty and crust is a light golden brown. Cut and serve with fresh fruit and a biscuit. The smell cooking will make anyone hungry.enjoy!

If you love a great Texas wine or a handcrafted Texas Beer, you will enjoy the Turtle Enoteca in Brownwood, TX. The small, but very quaint little bar is upscale and has lots to offer. The picture shows 2 different craft beer they offer, one a blonde and the other a stout, pretty big difference in flavor and how they look, both great beers. We paired these 2 with a hand made pizza and it was a great slow fresh meal to enjoy together. We pulled off a great surprise this weekend, had been planning with the man for several weeks to do an elopement ceremony and she didn't know about it. It went very well, and had plenty of tissue for her to use during the ceremony. I love doing special surprises for our guest. This was a great ending shot to the ceremony.

Bananas Foster French Toast

I made Bananas Foster French toast this morning for guest and it was really tasty. I love to cook with rum as it flavors so nicely. It's very simple, add butter to a pan and melt, add your sliced bananas brown a little add a few tablespoons of brown sugar and slowly pour in the rum and simmer. I usually add a little extra rum to make a syrup to spoon over the french toast. Then top this on top of your french toast and it's great.

Well the guest did have a great time, snowballs were flying and a snowman with really funky native grass hair was made. Wow a real white Christmas for us.

Bubble Baths

Peppermint Bark

12oz of chocolate chips (good brand) 1pound white chocolate chips, 1/2 tsp. peppermint extract, 1/2 c. crushed peppermint (old fashion sticks best)

Preheat over to 250, line cookie sheet with foil lightly spray. Spread the chocolate chips evenly on foil, place in oven about 5 min. till soft, now spread out on the cookie sheet, place in refrigerator to cool till firm about 20 min.

Melt white chocolate chips in microwave or dbl. boiler, add the extract stir in good. Let this sit to cool for just a minute while you crush the peppermint candy. Now spread quickly the white chocolate over the dark and top with peppermint chips. Chill till firm then break into pieces.

Christmas Candy Recipe

I love making candy at Christmas time, and one of the favorites we serve here is Peppermint Bark. enjoy!
12oz chocolate chips (use good quality), 1 # of white chocolate chips, 1/2 tsp. peppermint extract, 1/2 c. crushed peppermint candy. Line a 9×13 pan with foil, spay lightly. Spread out the dark chocolate chips in a layer, place in the oven on 250 till almost melted. Remove and spread out to make a solid sheet. Place in the refrigerator to firm about 20 min. Melt the white choc. in a dbl. boiler or use microwave. Let cool just a bit and then mix in peppermint extract, now spread over the top of the cooled drk chocolate and sprinkle with crushed peppermint candy. Let cool and then break into pieces.

Suspension Bridge at Regency

Regency & Beveridge Bridges: Two miles northwest of San Saba on China Creek Road (1/2 mile north of the wedding oak) the San Saba River is spanned by the Swinging Bridge or "Beveridge Bridge" as it is known locally. This is one of the few remaining swinging bridges in Texas. It is one lane with a timber floor.This area's first Colorado River Bridge was at Regency on the San Saba County Line. Built in 1903 the Regency Suspension Bridge served local farmers and rancher when going to market, but fell in 1924. Its successor was demolished by a 1936 flood. With 90 percent of the work completed by hand; the Regency suspension bridge was re-erected in 1939. Bypassed by paved farm roads, it now survives as one of the last suspension bridges in Texas and is a popular tourist stop. This is a fun day trip for our guest, take a picnic and enjoy the Texas backroads.

Baked Creme Brulee French Toast

1 loaf sourdough bread
1stick butter
1cup brown sugar
2tbsp. Light corn syrup
8 eggs
1c half & half
1tbsp. Grand Marnier
1tbsp Vanilla
1tspn. salt

Cut bread into small pieces, place in bowl. Mix eggs, half & half, Gr. marnier, vanilla & salt and pour over bread to soak.

Mix the butter, brown sugar and corn syrup in saucepan and melt.

Spray a baking pan or use ramekins, put melted butter mixture into bottom of pan, then top with the bread mix.

Bake at 350* for about 30 to 45 minutes, turn out onto plate and top with walnuts.

Rosemary Cream Cheese Eggs

5 eggs

4- 4" sprigs fresh rosemary

1/2 cup cream

4 Tbsp. cream cheese

salt to taste

Snip the rosemary into a pam sprayed skillet. Wisk the eggs and cream together pour over rosemary, stir constantly to a soft scramble, add cream cheese just to melted & blended in and salt to taste. Do not over cook the eggs. Garnish with rosemary sprigs. I use fresh eggs from my chickens and Rosemary from my garden. Serve with fruit and roll.

Baked Creme Brulee French Toast

1 loaf sourdough or cinnamon bread

1 stick butter

1 cup brown sugar

2tbsp. light corn syrup

8 eggs

1cup half & half

1tbsp. Grand Marnier

1 tbsp. vanilla

1tspn. salt

Tear up bread in a large bowl, pour in the mix of eggs, half & half, vanilla, Grand Marnier and salt. Soak the bread in this. Melt butter in pan add brown sugar and corn syrup. Pour the butter mix in a greased 9X11 baking pan, pour the bread mix on top. Cover and refrigerate over night. Preheat oven to 350* and bake for 45 minutes. Cut and turn over on plate so brulee is on top. I serve with chopped nuts and tarragon sausage. This is one of my mosted requested receipes.

Wow with summer in full swing, I love taking walks to see what is making their home here. Came upon this lovely creature by our fish tank. They marvel me with their wings so delicate and transparent. Love the night noises of summer too, with all the little critters making their special sounds to enchant the night and make for a peaceful sit on the porch.
